I have made pies for 49 years, and have a reputation of making very good pies. People like to come to eat, because they know that I will have a cream pie. Be it plain, Banana, chocolate or coconut. I have never had any trouble till recently. In fact it's just the last couple of years. Not always but occasionally I will now have a filling that although thick when I put it in the crust, after the meringue is cooked, the filling has liquified and is runny. Sometimes I can even cook two (the fillings are done separately) and one will turn out ok and the other won't. Using the same pots, and the same pie plates. I'm frustrated and have told my husband that I won't cook another cream pie till I figure out what is causing this. Any ideas?

I stumbled upon this recipe and am SO glad I did! These are absolutely the best biscuits I've ever eaten! I just have one question for you. Why self-rising flour? Can't I buy regular White Lily and add my own baking powder and salt? The reason I was wondering is because I do not like using baking powder with aluminum in it - and White Lily self-rising flour has aluminum in it! Just wondering how much salt and baking powder I'd have to add to two cups of regular flour.....

I know this is incredibly late to the game, BUT:

What would you recommend as the next-best substitute for lard? I was thinking maybe butter, or coconut oil? My father is Muslim and can't eat pork products, but I'm the only one in my house that cooks. I know it'll be a subpar biscuit, but your recipe looks like it sure as hell beats Pilsbury and Popeyes!

Thanks!

I'm in charge of a ladies brunch/luncheon coming up in April (but may change it to May 14, 2010 if it is still Nat'l Apron Day). I am looking for some type of entertainment--someone to give a demo/talk history--or some ideas should I have to do it myself. Any ideas? suggestions? I live in northeast South Dakota and have a lot of aprons. I'd appreciate a reply. Thank you!
